Vodka Sauce Meatballs

Ingredients

  • 1.5 lbs ground beef
  • 1 egg
  • ⅓ cup (Italian) bread crumbs
  • 2 tbsp Italian seasonings
  • 2 tsp salt
  • 2 tbsp olive oil
  • 1 pint cherry tomatoes 
  • 1 6 oz can tomato paste
  • ¼ of an onion or 1 shallot- finely chopped
  • 3 cloves garlic- finely chopped
  • ⅓ cup vodka
  • ½ cup half and half or milk
  • ½ cup freshly grated parmesan

 

Red pepper flakes

Directions

For the meatballs:

  1. In a large bowl mix ground beef, egg, bread crumbs, italian seasoning, and salt until well combined

  2. Form the meat into about 1 inch meatballs

  3. In a large frying pan cook the meatballs on medium-low heat, while frequently rotating, until they are fully cooked through

For the sauce: 

 

  1. In a large saucepan, over medium heat, add oil and tomatoes

  2. Cook the tomatoes, while frequently stirring, for about 10 minutes or until they start to get soft

  3. To the pan add onion, cook for about 3 minutes or until fragrant

  4. Add garlic and salt to taste, and cook for an additional 3 minutes

  5. Mix in tomato paste and lightly mash the tomatoes if they haven’t already burst

  6. After a few minutes, stir in the vodka and cook for a few more minutes

  7. Mix in half and half, parmesan, red pepper flakes and salt to taste, and water to thin if necessary

  8. Pour the sauce over the cooked meatballs and enjoy!
