Ingredients
- 1.5 lbs ground beef
- 1 egg
- ⅓ cup (Italian) bread crumbs
- 2 tbsp Italian seasonings
- 2 tsp salt
- 2 tbsp olive oil
- 1 pint cherry tomatoes
- 1 6 oz can tomato paste
- ¼ of an onion or 1 shallot- finely chopped
- 3 cloves garlic- finely chopped
- ⅓ cup vodka
- ½ cup half and half or milk
- ½ cup freshly grated parmesan
Red pepper flakes
Directions
For the meatballs:
- In a large bowl mix ground beef, egg, bread crumbs, italian seasoning, and salt until well combined 
- Form the meat into about 1 inch meatballs 
- In a large frying pan cook the meatballs on medium-low heat, while frequently rotating, until they are fully cooked through 
For the sauce:
- In a large saucepan, over medium heat, add oil and tomatoes 
- Cook the tomatoes, while frequently stirring, for about 10 minutes or until they start to get soft 
- To the pan add onion, cook for about 3 minutes or until fragrant 
- Add garlic and salt to taste, and cook for an additional 3 minutes 
- Mix in tomato paste and lightly mash the tomatoes if they haven’t already burst 
- After a few minutes, stir in the vodka and cook for a few more minutes 
- Mix in half and half, parmesan, red pepper flakes and salt to taste, and water to thin if necessary 
- Pour the sauce over the cooked meatballs and enjoy!
