Reece’s Protein Bites

Ingredients

  • 1 cup oat flour (blended oats)
  • ¾ cup peanut butter
  • ⅓ cup honey
  • 2 scoops chocolate protein powder
  • 1 tbsp cocoa powder
  • 2 tsp vanilla
  • 1 tsp salt
  • ¼ cup mini chocolate chips

 

Optional: additional chocolate chips and peanut butter for drizzling on top

Directions

  1. Cut zucchinis in half the long way

  2. Scoop out the inside of the zucchini to make a “boat”, do not throw away the insides

  3. Chop the insides of the zucchini into small pieces

  4. Place the zucchini boats on a baking sheet, rounded side down, and sprinkle with salt

  5. Bake at 350F for about 10 min

  6. In a large frying pan add oil and onion, cook until translucent and fragrant

  7. Add in garlic, cook for an additional 2 minutes or until fragrant

  8. Mix in tomato paste

  9. Add in sausage, sun dried tomatoes, and seasonings

  10. Mince and fully cook the sausage

  11. Mix in sausage, parmesan, and basil

  12. Pull the zucchini out of the oven and fill the boats with the sausage mixture

Optional: top with more parmesan

 

  1. Bake at 350F for about 15 more minutes

  2. Top with more basil and enjoy!
