Brookie Cookie

Ingredients

  • 9 tbsp butter
  • ¾ cup brown sugar- packed
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1.5 cups flour
  • 1.5 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1.25 cups chocolate chips- I used half
  • semi-sweet and half dark chocolate
  • 1.5 tbsp cocoa powder

Directions

1. In a medium bowl beat butter, brown sugar, and granulated sugar until smooth

2. Mix in egg and vanilla until just combined

3. In a separate bowl mix flour, baking powder, baking soda, and salt

4. Mix the flour mixture into the butter/sugar mixture

5. Split the base mixture in half and into two separate bowls, set one aside

6. Cookie dough: in the first bowl, mix in ½ cup of chocolate chips

7. Brownie dough: in the second bowl, mix in cocoa powder and then fold in ¾ cup of chocolate chips

8. Using a 3 tbsp cookie scoop, alternate scooping small portions of the cookie and brownie dough four times, or until the scoop is full- this will give the cookies the marbled look

9. Place dough in the fridge for 1 hour

10. Bake at 350F for 10-12 minutes

11. Turn off the oven and let the cookies bake for 2-3 more minutes
