Chili Mac & Cheese (Inspired by Half Baked Harvest)

Ingredients

  • 1lb ground beef
  • 1 shallot- diced
  • 1 tbsp chili powder
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • ¼ cayenne pepper
  • 1 can (28oz) crushed tomatoes
  • ¼ cup tomato paste
  • 1 can (4oz) diced green chilis
  • 2-3 cups chicken broth
  • 1lb medium shells
  • 2 oz cream cheese
  • 2 cups shredded cheese (your choice-colby, cheddar, pepper jack)
  • Salt and pepper
  • Green onions for serving

Directions

1. In a large pot, over medium-high heat, add beef, shallot, salt and pepper

2. Brown and mince the meat

3. Add seasonings: chili powder, garlic powder, cumin, cayenne

4. Cook until fragrant, about 5 minutes

5. Mix in tomatoes, tomato paste, green chilis, broth, and 2 cups of water

6. Add pasta and bring to a boil

7. Reduce to a simmer for 10 minutes, stirring occasionally, until pasta a cooked

8. Stir in cream cheese and cheese, cook for a few more minutes

9. Divide pasta into bowls, top with chopped green onion, and enjoy!
