Jalapeno Goat Cheese Scones

Ingredients

  • 2 shallots – finely chopped
  • 2 jalapenos – finely chopped
  • 2 tbsp honey
  • 1 cup goat cheese – crumbled
  • 2 cups flour
  • ½ cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 stick of butter – frozen
  • ½ cup sourdough discard
  • 2 tbsp heavy cream
  • 1 tsp vanilla
  • 1 egg

Directions

1. In a small saucepan add shallots and honey, cook for about 3 minutes over medium heat

2. Add jalapenos to the saucepan and cook for an additional 2-3 minutes, or until fragrant

3. Pour mixture into a separate bowl to cool

4. In a large bowl, mix together dry ingredients: flour, sugar, baking powder, and salt

5. Grate the frozen butter, or chop into very small pieces

6. Mash the butter into the dry ingredients until completely combined

7. In a separate bowl, mix together wet ingredients: sourdough discard, heavy cream, vanilla, and egg

8. Add wet ingredients into the dry ingredients

9. Mix and fold together the ingredients until about 50% combined

10. Add shallot and jalapeno mixture and goat cheese

11. Continue folding ingredients together until there are no dry pockets

12. On a floured surface, form dough into an 8” round disk

13. Cut into 8 triangular shaped pieces

14. Bake at 400F for 20-25 minutes

15. Optional: brush some additional honey on top
