Ingredients
- ½ box of linguini
- Trader Joe’s langostino tails
- 1 shallot- finely diced
- 1 tbsp oil (I use the oil from sun dried tomatoes for more flavor)
- 4 cloves of garlic- minced
- ~12 cherry tomatoes- sliced in half
- ½ cup white wine
- 3 tbsp butter
- ¼ cup heavy cream
- ½ cup parmesan- freshly grated
- ¼ cup fresh parsley
- ~10 fresh basil leaves
- Salt
Directions
- Cook pasta according to package directions, in heavily salted water 
- In a medium frying pan, over medium heat, add shallot and oil, cooking for a few minutes until fragrant 
- Turn down heat to medium-low, mix in garlic and tomatoes, salt to taste 
- Cover and cook for about 5 minutes, stirring occasionally 
- Add in wine, cover and let it reduce by half 
- Mix in lobster, butter, cream, and parmesan 
- Let everything melt together for a few minutes, over low heat 
- Mix in the noodles, herbs, and salt to taste
