Lobster Pasta

Ingredients

  • ½ box of linguini 
  • Trader Joe’s langostino tails
  • 1 shallot- finely diced
  • 1 tbsp oil (I use the oil from sun dried tomatoes for more flavor)
  • 4 cloves of garlic- minced
  • ~12 cherry tomatoes- sliced in half
  • ½ cup white wine
  • 3 tbsp butter
  • ¼ cup heavy cream
  • ½ cup parmesan- freshly grated
  • ¼ cup fresh parsley
  • ~10 fresh basil leaves
  • Salt

Directions

 

  1. Cook pasta according to package directions, in heavily salted water

  2. In a medium frying pan, over medium heat, add shallot and oil, cooking for a few minutes until fragrant

  3. Turn down heat to medium-low, mix in garlic and tomatoes, salt to taste

  4. Cover and cook for about 5 minutes, stirring occasionally

  5. Add in wine, cover and let it reduce by half

  6. Mix in lobster, butter, cream, and parmesan

  7. Let everything melt together for a few minutes, over low heat

  8. Mix in the noodles, herbs, and salt to taste

  9. Enjoy!
