Pumpkin Zucchini Muffins

Ingredients

  • 1 cup pumpkin puree
  • 1 zucchini
  • ½ cup pure maple syrup
  • 1/3 cup melted coconut oil or apple sauce
  • 2 eggs
  • 4 tbsp milk
  • 1.5 tsp vanilla
  • 1.5 cups flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • ½ tsp salt

 

*Makes 20-24 muffins

Directions

1. Grate zucchini until you get 1 cup

2. With a cheese cloth, ring the excess liquid out of the grated zucchini

3. In a large bowl, mix together wet ingredients: pumpkin puree, zucchini, maple syrup, coconut oil, eggs, milk, vanilla

4. In a separate bowl, mix together dry ingredients: flour, pumpkin pie spice, baking powder, salt

5. Add dry ingredients into the bowl of wet ingredients

6. Mix until just combined

7. Bake in a muffin pan at 350F for 20- 25 minutes
