Ingredients
- 4 zucchinis
- 1 tbsp oil – I use the oil from the sundried tomatoes for extra flavor
- ¼ onion- finely chopped
- 1-2 cloves of garlic- minced
- ¼ cup tomato paste
- 1 lb (spicy) sausage
- ¼ cup sundried tomatoes- roughly chopped
- 1 tsp chili powder
- 1 tsp red pepper flakes
- 2 tsp oregano
- ½ cup parmesan- shredded
- ¾ cup cottage cheese
- Fresh basil ribbons (~10-15 leaves)
- Salt
Directions
- Cut zucchinis in half the long way 
- Scoop out the inside of the zucchini to make a “boat”, do not throw away the insides 
- Chop the insides of the zucchini into small pieces 
- Place the zucchini boats on a baking sheet, rounded side down, and sprinkle with salt 
- Bake at 350F for about 10 min 
- In a large frying pan add oil and onion, cook until translucent and fragrant 
- Add in garlic, cook for an additional 2 minutes or until fragrant 
- Mix in tomato paste 
- Add in sausage, sun dried tomatoes, and seasonings 
- Mince and fully cook the sausage 
- Mix in sausage, parmesan, and basil 
- Pull the zucchini out of the oven and fill the boats with the sausage mixture 
Optional: top with more parmesan
- Bake at 350F for about 15 more minutes 
- Top with more basil and enjoy!
