Ingredients
- 4 zucchinis
- 1 tbsp oil – I use the oil from the sundried tomatoes for extra flavor
- ¼ onion- finely chopped
- 1-2 cloves of garlic- minced
- ¼ cup tomato paste
- 1 lb (spicy) sausage
- ¼ cup sundried tomatoes- roughly chopped
- 1 tsp chili powder
- 1 tsp red pepper flakes
- 2 tsp oregano
- ½ cup parmesan- shredded
- ¾ cup cottage cheese
- Fresh basil ribbons (~10-15 leaves)
- Salt
Directions
Cut zucchinis in half the long way
Scoop out the inside of the zucchini to make a “boat”, do not throw away the insides
Chop the insides of the zucchini into small pieces
Place the zucchini boats on a baking sheet, rounded side down, and sprinkle with salt
Bake at 350F for about 10 min
In a large frying pan add oil and onion, cook until translucent and fragrant
Add in garlic, cook for an additional 2 minutes or until fragrant
Mix in tomato paste
Add in sausage, sun dried tomatoes, and seasonings
Mince and fully cook the sausage
Mix in sausage, parmesan, and basil
Pull the zucchini out of the oven and fill the boats with the sausage mixture
Optional: top with more parmesan
Bake at 350F for about 15 more minutes
Top with more basil and enjoy!
