Thai Peanut Chicken Salad

Ingredients

1lb chicken- shredded

2 medium carrots- shredded

1 cup edamame 

3 green onions- chopped

¼ cup peanuts- chopped

½ cup peanut butter

4 tbsp coconut aminos

1 tsp sesame oil

Juice of 1.5 limes

2 tbsp red pepper flakes

2 tsp garlic powder

1 tsp ginger

 

Optional: spinach or rice

Directions

  1. In a medium bowl whisk together peanut butter, coconut aminos, sesame oil, lime juice, red pepper flakes, garlic powder, ginger

Tip: if your peanut butter is not naturally runny, warm it up in the microwave so it is easier to mix

  1. In a large bowl mix chicken, carrots, edamame, green onions, and peanuts

  2. Mix peanut sauce in with the chicken mixture

  3. Optional: serve over spinach or rice
