Ingredients
- 1 lb ground turkey
- ¼ yellow onion- finely diced
- ¼ cup crumbled feta
- ⅓ cup panko bread crumbs
- ¼ cup fresh dill- chopped
- 1 cucumber- shredded
- ½ cucumber- diced
- 1 avocado- diced
- 1 lime- juice and zest
- ½ -1 cup farro
- 1 cup plain greek yogurt
- ½ tsp garlic powder
- Salt
Directions
- Cook farro according to package directions 
- In a medium bowl mix turkey, feta, onion, bread crumbs, ⅓ of the dill, ½ of the shredded cucumber, lime zest, ½ tsp salt 
- Roll mixture into meatballs 
- Over medium heat, cook the meatballs for about 10 minutes, or until the outside is golden brown and the inside is cooked through 
- In a small bowl mix diced cucumber, avocado, ⅓ of the dill, juice of ½ of the lime, and a pinch of salt 
- In a second small bowl mix yogurt, the rest of the shredded cucumber, the rest of the dill, garlic powder, juice of ½ of the lime, and salt to taste 
- Assemble the bowl by layering farro, avocado cucumber salad, meatballs, and tzatziki sauce
