Feta Meatball Bowl

Ingredients

  • 1 lb ground turkey
  • ¼ yellow onion- finely diced
  • ¼ cup crumbled feta
  • ⅓ cup panko bread crumbs
  • ¼ cup fresh dill- chopped
  • 1 cucumber- shredded
  • ½ cucumber- diced
  • 1 avocado- diced
  • 1 lime- juice and zest
  • ½ -1 cup farro
  • 1 cup plain greek yogurt
  • ½ tsp garlic powder
  • Salt

Directions

  1. Cook farro according to package directions

  2. In a medium bowl mix turkey, feta, onion, bread crumbs, ⅓ of the dill, ½ of the shredded cucumber, lime zest, ½ tsp salt

  3. Roll mixture into meatballs

  4. Over medium heat, cook the meatballs for about 10 minutes, or until the outside is golden brown and the inside is cooked through

  5. In a small bowl mix diced cucumber, avocado, ⅓ of the dill, juice of ½ of the lime, and a pinch of salt

  6. In a second small bowl mix yogurt, the rest of the shredded cucumber, the rest of the dill, garlic powder, juice of ½ of the lime, and salt to taste

  7. Assemble the bowl by layering farro, avocado cucumber salad, meatballs, and tzatziki sauce
