Salmon Bowl

Ingredients

  • 4 small Salmon filets 
  • 2.5 tsp salt
  • 1 tsp garlic powder
  • 1 tsp garlic
  • ½ tsp thyme
  • ½ tsp dill
  • 1 tbsp sriracha
  • 2 tbsp mayo
  • 1 tsp lemon juice
  • ½ cup mirin
  • ½ cup sugar
  • ½ cup soy sauce
  • 1 tbsp corn starch 
  • 1 mango – diced
  • 1 avocado – diced
  • ¼ red onion – minced
  • 4 tbsp lime juice
  • 2 persian cucumbers – diced
  • 1 cup edamame- shelled 
  • 2 cups rice- cooked

 

Directions

 

  1. Cut salmon into about 1” cubes

  2. In a small bowl mix 1 tsp salt, garlic powder, thyme, and dill

  3. Toss the salmon bites in the seasoning blend

  4. Air fry salmon at 400F for 6-7 minutes

  5. In a small bowl, make the spicy mayo by combining sriracha, mayo, lemon juice, and ½ tsp salt

  6. In a small saucepan over medium heat, mix mirin, sugar, and soy sauce until the sugar is dissolved 

  7. Whisk corn starch into saucepan mixture and simmer until thickened

  8. In a medium bowl, make the mango salsa by combining mango, avocado, onion, lime juice, and 1 tsp salt

  9. To serve, in a bowl add rice, edamame, cucumber, salmon, mango salsa, and drizzle spicy mayo and unagi sauce on top

  10. Enjoy!
