Ingredients
- 4 small Salmon filets
- 2.5 tsp salt
- 1 tsp garlic powder
- 1 tsp garlic
- ½ tsp thyme
- ½ tsp dill
- 1 tbsp sriracha
- 2 tbsp mayo
- 1 tsp lemon juice
- ½ cup mirin
- ½ cup sugar
- ½ cup soy sauce
- 1 tbsp corn starch
- 1 mango – diced
- 1 avocado – diced
- ¼ red onion – minced
- 4 tbsp lime juice
- 2 persian cucumbers – diced
- 1 cup edamame- shelled
- 2 cups rice- cooked
Directions
- Cut salmon into about 1” cubes 
- In a small bowl mix 1 tsp salt, garlic powder, thyme, and dill 
- Toss the salmon bites in the seasoning blend 
- Air fry salmon at 400F for 6-7 minutes 
- In a small bowl, make the spicy mayo by combining sriracha, mayo, lemon juice, and ½ tsp salt 
- In a small saucepan over medium heat, mix mirin, sugar, and soy sauce until the sugar is dissolved 
- Whisk corn starch into saucepan mixture and simmer until thickened 
- In a medium bowl, make the mango salsa by combining mango, avocado, onion, lime juice, and 1 tsp salt 
- To serve, in a bowl add rice, edamame, cucumber, salmon, mango salsa, and drizzle spicy mayo and unagi sauce on top 
- Enjoy!
