Teriyaki Chicken Panini with Apple Slaw

Ingredients

  • 1lb chicken tenderloins or breasts
  • ¼ cup teriyaki sauce
  • Ciabatta bread
  • Pesto (optional)
  • 1 avocado- sliced
  • 1 cup cabbage- shredded
  • ½ Honeycrisp apple- julienne cut
  • 1 medium carrot- julienne cut
  • 2 tbsp cilantro- chopped
  • 2 tbsp mayo
  • 3 tbsp plain Greek yogurt
  • 1 tsp lime juice
  • 1.5 tbsp brown sugar
  • < ¼ tsp cumin
  • < ¼ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ½ tsp salt

Directions

1. Marinate the chicken in teriyaki

sauce for at least 1 hour, but the

longer the better

2. After marinating, cook the chicken in

a small frying pan over medium heat

until the internal temperature

reaches 165F, set the chicken aside

3. In a small bowl mix mayo, yogurt,

lime juice, brown sugar, and

seasonings

4. In a medium bowl mix the cabbage,

apple, carrot, and cilantro

5. Mix the small sauce bowl into the

medium bowl of veggies to make the

slaw

6. Toast the inside of the ciabatta bread

slices

7. Slice the chicken into long, thin

strips

8. On the toasted ciabatta layer the

chicken, slaw, and avocado

9. Optional: spread a thin layer of pesto

on the top layer of the ciabatta

10. Add top and bottom layers of the

bread together and toast the outside

of the sandwich in a panini press or

frying pan.
