Tuscan White Bean and Sausage Skillet

Ingredients

  • 2 tbsp butter
  • 1 shallot- diced
  • 2 cloves of garlic- minced
  • 1lb spicy Italian sausage
  • 3-4 leaves of kale- roughly chopped
  • 1/3 cup sun dried tomatoes- chopped
  • 1 tbsp tomato paste
  • ¼ tsp dried oregano
  • ¼ dried basil
  • Salt and pepper
  • 15oz can of butter beans, drained
  • 1 cup chicken broth
  • ¼ cup heavy cream or milk
  • ¼ cup parmesan cheese- grated
  • Optional: fresh parsley for serving

Directions

1. Over medium heat-high heat, add butter and shallot to a large skillet and cook for a few minutes

2. Stir in garlic and tomato paste

3. Add sausage, brown and mince it

4. Stir in kale, sun dried tomatoes, and seasonings

5. Cook for a few minutes

6. Add in broth, cream, and beans…  Bring to a simmer

7. Simmer for 5-10 minutes before adding in parmesan

8. Cook until the dish is melty and thick

9. Enjoy!
